UMFS Fantastic Turkey Burgers

Have you ever had a Turkey Burger that the entire family will enjoy? Try this simple recipe, which will be a favorite in your house.

Prep Time: 5 Minutes Cook Time: 10 Minutes Ready In: 15 Minutes Yields: 4 Servings

Ingredients:
1 pound ground turkey
1tablespoon garlic powder
1 tablespoon red pepper flakes
¼ cup of diced onion
1 egg
½ cup of crushed cheese flavored crackers

Directions:
1. Preheat a grill for high heat
2. In a large bowl, mix together the ingredients and form into4 large patties.
3. Place patties on the grill, and cook for about 5 minutes per side, until well done.


Chicken Kabobs

4 serving recipe that is fast and easy, so you can enjoy your summer.

Prep Time: 15 minutes Cook Time: 15 Minutes Ready In: 30 Minutes

Ingredients:
4 skinless, boneless chicken breast halves - cubed
1 onion, cut into wedges
1 large green bell pepper, cut into 2 inch pieces
1 large red bell pepper, cut into 2 inch pieces
1 cup of barbeque sauce
Skewers

Directions:
1. Preheat grill for high heat
2. Thread the chicken, green bell pepper, onion, and red pepper pieces, onto skewers alternately.
3. Lightly oil the grill grate. Place kabobs on the prepared grill, and brush with barbeque sauce. Cook, turning and brushing with barbeque sauce frequently, for 15 minutes, or until chicken juices run clear.

UMFS Strawberries & Cream

What a great way to enjoy a good source of vitamin C and potassium on a hot summer day. Beware there is a hint of Amaretto liqueur and sour cream for a low- fat dessert.

Serves 6

Ingredients:
1 quart fresh strawberries, hulled and halved (reserve 6 whole for garnish)
1 ½ cups fat free sour cream
½ cup of brown sugar
2 tablespoons of Amaretto liqueur

Directions:
In a small bowl, whisk together the sour cream, brown sugar and the liqueur

In a large bowl, add the halved strawberries and sour cream mixture. Stir gently to mix. Cover and refrigerate until well chilled, about 1 hour.

Scoop the strawberries into 6 colorful bowls or chilled sherbet glasses. Place 1 whole strawberry into each serving and serve immediately.
